Cinnamon-raisin Cream Scones Recipe

Ingredients
  • 1/4 c raisins (optional) .
  • Topping .
  • 1 tbsp baking powder .
  • 1/2 c sugar .
  • 2 eggs .
  • 1/2 c light cream .
  • 6 tbsps vegetable shortening .
  • 1/2 tsp salt .
  • 1/4 c sugar .
  • 2 tbsps cinnamon .
  • 2 c all-purpose flour

Directions
  • Step #1 Preheat Oven to 400F degrees.
  • Step #2 Grease a baking sheet.
  • Step #3 Topping: Mix cinnamon & 1/4 c sugar in a small bowl, set aside.
  • Step #4 Scones: Have all ingredients at about room temp.
  • Step #5 Sift flour, then measure out 2 c into mixing bowl.
  • Step #6 Add baking powder, salt, & sugar & sift again.
  • Step #7 Add shortening, cutting it in until mixture resembles coarse meal.
  • Step #8 In a seperate bowl, beat eggs, add cream.
  • Step #9 Add to flour mixture, (reserving 2 tbsps to brush on top of scones).
  • Step #10 Add raisins & stir just until mixed.
  • Step #11 Turn onto lightly floured board.
  • Step #12 Knead sticky dough for 1/2 min.
  • Step #13 Shape dough into ball, place on greased baking sheet.
  • Step #14 Pat down into circle of dough about 1 1/2 inches thick.
  • Step #15 Cut into 8 wedges & move wedges apart on sheet so they are evenly spaced.
  • Step #16 Brush each wedge with reserved egg/cream mixture, & sprinkle cinnamon sugar topping generously over each.
  • Step #17 Bake in 400F degree oven for 11-14 mins, or until lightly golden.
  • Step #18 Serve warm with butter & jam.
