Thai Fish Cake Starter Recipe

Ingredients
  • 4 tbsps fresh coriander, roughly sliced .
  • 10 oz cod, skinned & cubed .
  • 1 garlic clove, crushed .
  • 1 red chili, deseeded & roughly sliced .
  • salt & pepper .
  • 1 stalk lemongrass, roughly sliced .
  • 2 spring onions, roughly sliced .
  • 3 oz prawns

Directions
  • Step #1 Pre Heat Oven 190C 375F Gas5.
  • Step #2 In the mixer, whizz together chilli, coriander, garlic, spring onions & lemongrass.
  • Step #3 Dry Prawns & Cod on kitchen roll & add to mixer, season.
  • Step #4 Dampen hands & shape the mixture into 12 cakes.
  • Step #5 Place on a lightly oiled baking sheet.
  • Step #6 Bake for 12-15 mins, turn halfway through cooking time.
  • Step #7 Serve with Sweet Chilli Dipping Sauce.
  • Step #8 Can serve this with some salad leaves too.
