Fruit Smoothie No-bake Cheesecake Recipe

Ingredients
  • 1/2 c granulated sugar .
  • 1 1/2 c graham cracker crumbs .
  • FOR THE CRUST .
  • 1/4 c unsalted butter, melted .
  • FOR THE FILLING .
  • 4 (8 oz) packages neufchatel cheese, softened .
  • 1 (8 oz) container Cool Whip Lite, thawed, divided .
  • 1 (12 oz) package frozen mixed berries, thawed, drained .
  • 2 tbsps granulated sugar

Directions
  • Step #1 FOR THE CRUST: Line 13"x9" baking dish with foil wrap, with ends of foil wrap extending over sides of pan [to be used as handles].
  • Step #2 Mix graham crumbs, butter & 2 Tbsp sugar.
  • Step #3 Press firmly onto bottom of prepared pan.
  • Step #4 Refrigerate while preparing filling.
  • Step #5 FOR THE FILLING: In large bowl with electric mixer on medium speed, beat cheese & 1/2 c sugar until well mixed.
  • Step #6 In another bowl, smash drained berries with fork.
  • Step #7 Stir berries into cheese mixture.
  • Step #8 Gently stir in the 2 c whipped topping.
  • Step #9 Spoon over crust.
  • Step #10 Cover up & put in the fridge 4 hrs or until firm.
  • Step #11 Use foil wrap handles to remove cheesecake from pan before cutting into pieces to serve.
  • Step #12 Top each piece with dollops of remaining whipped topping.
  • Step #13 Store leftovers in refrigerator.
