Sweetcorn In Spicy Peanut Sauce (vegan) Recipe

Ingredients
  • 4 tomatoes .
  • 1/2 tsp ground cumin .
  • 1 tsp lemon juice .
  • 12 oz frozen or canned sweetcorn .
  • 1/2 tsp garam masala .
  • 1 tsp turmeric .
  • 1 tsp ginger .
  • 1 tsp cumin seeds .
  • 1 tsp chili powder .
  • 1 onion .
  • 1 tsp sunflower oil .
  • 3 tbsps natural-style peanut butter .
  • 1 chili (red or green)

Directions
  • Step #1 Finely chop the onion, chili, & tomatoes.
  • Step #2 Heat the oil, add the cumin seeds & stir.
  • Step #3 Add the onion & saute until golden brown.
  • Step #4 Add the ginger, tomatoes, chilli, dhana jheera, chilli powder, garam masala & turmeric.
  • Step #5 Stir while cooking for about 3 mins.
  • Step #6 Add the sweetcorn, 5 tbsp of water, & the peanut butter.
  • Step #7 Cover up, & let simmer for about 15 mins, stirring occassionaly.
  • Step #8 Add lemon juice to taste, mix well, & serve as soon as possible.
