Hazelnut Crescents Recipe

Ingredients
  • 1 egg yolk, lightly beaten .
  • 1/4 c cornflour .
  • 1 1/4 c hazelnut meal .
  • 1/3 c rice flour .
  • 1 tsp vanilla essence .
  • 1/4 c caster sugar (aka superfine sugar) .
  • 100 g butter, sliced & chilled .
  • 1/2 c icing sugar, as duting to serve

Directions
  • Step #1 Preheat oven to 160 degrees Celsius.
  • Step #2 Grease & line 2 baking trays with paper.
  • Step #3 Sift flours into a bowl.
  • Step #4 Add sugar & hazelnut meal.
  • Step #5 Mix well.
  • Step #6 Rub butter into the hazelnut meal mixture, using your fingertips.
  • Step #7 Stir in egg yolk & essence.
  • Step #8 Stir the mixture until a soft dough forms & then lightly knead on a gluten free flour dusted bench.
  • Step #9 Divide the mixture into two & wrap in plastic cling-wrapfor 15 mins.
  • Step #10 Roll each portion of dough into a long thick log, approx 2cm thick (1 inch).
  • Step #11 Cut the logs at 4cm intervals.
  • Step #12 Shape each piece into a crescent.
  • Step #13 Place crescents on prepared trays.
  • Step #14 Bake for 15-20 mins or until light golden in colour.
  • Step #15 Stand on trays for 5 mins before transferring to wire racks to cool.
  • Step #16 Dust with gluten-free icing sugar to serve.
