Gluten Free Pancakes Recipe

Ingredients
  • 1/3 c tapioca flour .
  • 1 tsp xanthan gum .
  • flour mixture .
  • 1 tsp sugar .
  • 2 tbsps butter, melted .
  • 1 tsp vanilla .
  • 1 tbsp white vinegar .
  • 1 c milk, minus 1 tbs .
  • 2/3 c cornstarch .
  • 2 c rice flour, white .
  • 1/4 tsp baking soda .
  • 1/2 tsp baking powder .
  • 1 egg, separated .
  • pancake batter .
  • 1/8 tsp salt

Directions
  • Step #1 Mix the Flour Mixture & set aside.
  • Step #2 Mix baking soda, baking powder, salt, & sugar with just 1 c of the Flour Mixture.
  • Step #3 Pour the TBS of vinegar in a measuring c & add enough milk to make 1 c of liquid.
  • Step #4 Add the egg white & whisk to mix.
  • Step #5 In a separate dish, melt the butter & add the yolk & vanilla, & whisk to mix.
  • Step #6 Add all liquid ingredients to the dry & mix until mixd.
  • Step #7 Use approximately 1/4 c batter per pancake & fry up in your favorite hot pan or griddle.
  • Step #8 We like these with Maple Syrup & butter.
