Shrimp Saute Mexicali Recipe

Ingredients
  • 1/4 c slivered almonds, toasted .
  • 2 tbsps butter .
  • 1/2 tsp crushed red pepper flakes .
  • salt, to taste .
  • 4 c cooked rice .
  • 1/8 tsp cayenne pepper .
  • 1/2 tsp ground coriander .
  • 1/4 c madeira wine .
  • 2 tbsps jalapeno peppers, seeded & minced .
  • 1 1/2 lbs shrimp, shelled & deveined .
  • 1/3 c green bell peppers, sliced .
  • 3 tbsps olive oil .
  • 1/3 c orange juice .
  • 1/8 tsp ground cloves .
  • 1 tbsp garlic, minced .
  • 1/3 c red onions, sliced .
  • 1/2 c tomatoes, sliced .
  • 1/4 c green olives, sliced .
  • 1/4 c black olives, sliced .
  • 1/8 tsp ground cinnamon .
  • fresh ground pepper, to taste .
  • 3 tbsps dried currants .
  • 1/2 tsp cumin

Directions
  • Step #1 In a large skillet heat olive oil over medium-high heat.
  • Step #2 Add tomatoes through salt & pepper mixing ingredients together & saute for 2 to 3 mins.
  • Step #3 Add the shrimp & saute them just until they turn pink.
  • Step #4 Add the Madeira & orange juice & deglaze the pan.
  • Step #5 Cook for an extra 2 to 3 mins or until the liquid is reduced by half.
  • Step #6 Add the butter & swirl it in so that the sauce thickens.
  • Step #7 Serve over rice & garnish with the toasted slivered almonds.
