Creamy Pasta Salad With Tuna And Vegetables (low Fat) Recipe

Ingredients
  • 1 sweet red pepper, seeded & sliced .
  • 1 cucumber, peeled & sliced .
  • 1/3 c reduced-fat mayonnaise .
  • 2 tbsps Italian parsley, sliced .
  • 3 green onions, sliced .
  • For the dressing .
  • 1 (7 oz) can tuna in water, drained & flaked .
  • 1-2 tbsp dill weed, sliced .
  • salt, to taste .
  • 3/4 c plain nonfat yogurt .
  • black pepper, to taste .
  • 1 tsp Dijon mustard .
  • 8 oz rotini pasta, cooked, rinsed under cold water & drained well

Directions
  • Step #1 Combine rotini, red pepper, cucumber, green onions & tuna In a large-ish bowl & set aside.
  • Step #2 In a medium bowl whisk all dressing ingredients.
  • Step #3 Pour dressing over salad ingredients & stir well.
  • Step #4 Refrigerate, covered, at least 2 hrs before serving.
