Guadalajaran Quesadillas Recipe

Ingredients
  • 1/4 tsp cumin .
  • 24 inches corn tortillas .
  • 1 tsp oregano .
  • 1 garlic clove, minced .
  • 1/2 c grated reduced-fat monterey jack cheese .
  • 1/4 c tequila .
  • 6 oz fresh spinach .
  • 1 small onion, sliced .
  • 2 tbsps vegetable oil

Directions
  • Step #1 In medium sauce pan, heat oil over med-heat/flame.
  • Step #2 Add onions & saute for 5 mins.
  • Step #3 Stir in garlic, cumin & oregano & saute for 2 mins.
  • Step #4 Add tequila & let simmer for 1 min.
  • Step #5 Stir in spinach.
  • Step #6 Cover up, reduce heat to medium-low & steam for 5 mins.
  • Step #7 Uncover & cook for 3 mins to evaporate liquid.
  • Step #8 Place one tortilla in sillet over med-heat/flame.
  • Step #9 Sprinkle top with 1/4 c cheese.
  • Step #10 Top with 1/4 c spinach mixture & second tortilla.
  • Step #11 Cook 2 mins, each side.
  • Step #12 Repeat with remaining ingredients.
