Swirl Cheesecake Bars Recipe

Ingredients
  • Filling .
  • 2 large eggs .
  • Crust .
  • 1/4 tsp liquid red food coloring .
  • 4 oz white baking chocolate .
  • 3/4 c butter, softened .
  • 1 c confectioners' sugar .
  • 1/2 tsp salt .
  • 1/2 c sour cream .
  • 2 (8 oz) packages cream cheese, softened .
  • 1/2 c granulated sugar .
  • 2 tbsps all-purpose flour .
  • 1 c frozen unsweetened raspberries, thawed .
  • 1 tsp vanilla extract .
  • 1 1/2 c all-purpose flour .
  • 1/4 tsp raspberry extract

Directions
  • Step #1 Heat oven to 350 degrees.
  • Step #2 You'll need a 13x9-inch baking pan lined with foil wrap (let foil wrap extend about 2 inches above pan at both ends).
  • Step #3 For crust, beat butter in medium bowl until creamy.
  • Step #4 Add confectioners' sugar & salt; beat 1 min until light & fluffy.
  • Step #5 Gradually beat in flour just until mixed.
  • Step #6 With fingers, press evenly over bottom of pan.
  • Step #7 Bake 18 mins or until golden.
  • Step #8 Place pan on wire rack; let cool.
  • Step #9 Filling: Melt chocolate in small bowl in microwave as package directs.
  • Step #10 Cool to about room temp.
  • Step #11 With a rubber spatula, press raspberries through a fine strainer set over medium bowl (you should have 1/4 c puree); discard seeds.
  • Step #12 Beat cream cheese & sugar in large bowl until creamy.
  • Step #13 Beat in eggs, 1 at a time.
  • Step #14 Beat in sour cream & vanilla extract, then flour just until mixed.
  • Step #15 Stir in 1 c batter, the food color & raspberry extract into raspberry puree; remove & reserve 1/2 c.
  • Step #16 Stir melted white chocolate into remaining batter.
  • Step #17 Pour 1 1/2 c white batter over crust; top this with spoonfuls of remaining raspberry mixture, then remaining white batter to cover.
  • Step #18 Top with small dollops reserved raspberry mixture.
  • Step #19 Drag a toothpick through dollops & white batter to marbleize.
  • Step #20 Bake 32-35 mins until slightly puffed & set.
  • Step #21 Cool completely in pan on wire rack, then put in the fridge at least 1 hr until firm.
  • Step #22 To serve, holding foil wrap by ends, lift to cutting board.
  • Step #23 Cut in 4 equal rows lengthwise & 8 crosswise.
