Mini Meatloaves Recipe

Ingredients
  • 1 c ketchup .
  • 1/2 c 2% low-fat milk .
  • 1/4 c fresh parsley, sliced or 2 tbsps dried parsley .
  • 2 tbsps apple cider vinegar .
  • 2 large eggs .
  • 1 small onion, minced finely (or you can use onion powder or dried onion) .
  • 2 tbsps fresh thyme or 1 tsp dried thyme .
  • sea salt & freshly ground black pepper .
  • 1 lb ground chuck (twice ground, ask at the meat counter or do yourself since this makes a difference) .
  • 1-2 garlic clove, minced finely (or you can use garlic powder) .
  • 1 tbsp Dijon mustard .
  • 1/2 lb ground veal (twice ground) .
  • 1/4 c light brown sugar .
  • 2 tbsps fresh oregano or 1 tsp dried oregano .
  • 2 c white breadcrumbs (no crusts) .
  • 1/2 lb ground pork (twice ground)

Directions
  • Step #1 Mix all ingredients together by hand - incorporate well, but don't over mix.
  • Step #2 Divide into balls & fill 12 muffin tins with the mixture.
  • Step #3 Allow mixture to come to about room temp while oven heats to 350 degrees.
  • Step #4 (This is a great time to serve appetizers or first courses) Bake mini meatloaves for 20 mins.
  • Step #5 Meanwhile, mix 1 c of ketchup, in a small saucepan, 1/4 c of brown sugar & 2 tbs apple cider vinegar & bring to a simmer.
  • Step #6 After baking meatloaves for about 20 mins, spread sauce over loaves & bake for another 5 mins, until a glaze forms.
  • Step #7 Remove from oven, serve.
