Cream Of Pumpkin Soup Recipe

Ingredients
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cinnamon
  • 2 tbsps butter, melted
  • 3 tbsps margarine, softened
  • 2 (14.5 oz) cans chicken broth
  • 1 tsp salt
  • 1 (15 oz) can pumpkin puree
  • 4 slices whole wheat bread
  • 1/8 tsp ground ginger
  • 1 c heavy whipping cream
  • 1 c sliced onion
  • 1 tbsp brown sugar
  • 1/8 tsp ground black pepper

Directions
  • Step #1 Preheat oven to 400F degrees F(200 degrees C).
  • Step #2 Combine butter, brown sugar, & cinnamon.
  • Step #3 Spread butter mixture evenly over one side of each bread slice.
  • Step #4 Place bread, buttered side up, on a baking sheet.
  • Step #5 Bake 8 to 10 mins, or until bread is crisp & topping is bubbly.
  • Step #6 Cut each slice of bread into 8 small triangles or squares.
  • Step #7 Saute onion in butter in a medium saucepan until tender.
  • Step #8 Add 1 can chicken broth; stir well.
  • Step #9 Bring to a boil; cover, reduce heat, & let simmer 15 mins.
  • Step #10 Transfer broth mixture into the container of a mixer or processor.
  • Step #11 Process until smooth.
  • Step #12 Return mixture to saucepan.
  • Step #13 Add remaining can of broth, pumpkin, ground cinnamon, ground ginger, salt, & ground pepper; stir well.
  • Step #14 Bring to a boil; cover, reduce heat, & let simmer 10 mins, stirring every once in awhile.
  • Step #15 .
  • Step #16 Stir in whipping cream & heat through.
  • Step #17 Do not boil.
  • Step #18 Ladle into individual soup bowls.
  • Step #19 Top each serving with Cinnamon Croutons.
