Savoury Carrot Pudding Recipe

Ingredients
  • 3 eggs, beaten .
  • 300F ml vegetable stock .
  • 1 oz butter .
  • 1 tsp soy sauce .
  • for the carrot puree .
  • 1/4 pint milk .
  • 1 oz butter .
  • 3 oz grated cheddar cheese .
  • 1 oz whole wheat flour .
  • For the topping .
  • 2 tbsps sliced parsley .
  • 1 lb carrots

Directions
  • Step #1 Grate the carrots & place this in a saucepan with half the vegetable stock & the butter.
  • Step #2 Cover up & let simmer for 15 mins, the carrots should be really tender.
  • Step #3 add the parsley & soy & liquidise until smooth.
  • Step #4 If it is too thick add some of the remaining stock.
  • Step #5 Spice up the purée & spread in the bottom of a greased oven proof dish.
  • Step #6 Melt the second lot of the butter in a pan, stir in the the flour & cook for 1 min.
  • Step #7 Stir in the milk & continue stirring for another 2 mins.
  • Step #8 Remove the pan from the heat & beat in the eggs, followed by the cheese.
  • Step #9 Spice up if desired & pour over the carrot puree.
  • Step #10 bake this at 180C/350F for 45 mins, the top layer should be just set.
