Fran & Mary's Bran Muffins Recipe

Ingredients
  • 5 tsps baking soda .
  • 1 c shortening .
  • 4 eggs .
  • 2 c boiling water .
  • 1 quart buttermilk .
  • 6 oz sliced dates or raisins or nuts .
  • 5 c flour .
  • 2 c 40% bran flakes .
  • 2 c sugar .
  • 1 tsp salt .
  • 3 c all-bran cereal

Directions
  • Step #1 In a large bowl mix baking soda, water & buttermilk.
  • Step #2 In a seperate bowl cream together shortening, sugar, eggs & salt.
  • Step #3 Add the cream mixture to the liquid mixture.
  • Step #4 Stir in bran cereal & flakes.
  • Step #5 Mix well.
  • Step #6 Add either dates or raisens or nuts.
  • Step #7 You can add dates/raisens & nuts.
  • Step #8 These muffins must be mixed & then stored for at least 12 hrs before baking them.
  • Step #9 Be sure to store this in an airtight container.
  • Step #10 Stir mixture before putting them in muffin pans.
  • Step #11 Bake 15-20 min at 375 degrees.
  • Step #12 These keep for 3 weeks in the fridge.
