Step #1 Butter outsides of 2 of the pices of cinnamon & set aside.
Step #2 In a small bowl, mix together the coconut milk & grandmarnier.
Step #3 Brush BOTH SIDES of 1 slice of bread (The one with no butter) with this mixture.
Step #4 Let soak while preparing the cheeses.
Step #5 In a separate bowl, mix the sliced white chocolate with the mascarpone cheese & powdered sugar- set aside.
Step #6 In another bowl mix the Neufchatel, sliced dried appricots, honey, marmalade & pinch of cinnamon.
Step #7 Spread the first mixture (white chocolate/mascarpone)onto inside of 1 of the dry pieces of cinnamon bread & sandwich it together with the soaked piece.
Step #8 Take the remaining dry piece of bread & spread the second mixture (neufchatel/apricot mixture)onto the inside- sandwiching it to the other side of the soaked piece.
Step #9 each cheese mixture will be sandwiching either side of the soaked piece.
Step #10 Place sandwich into a non-stick skillet over med-heat/flame.
Step #11 Let sit for 2 to 3 mins or until cheese is starting to melt & bread is browning.
Step #12 flip & press firmly- cook an extra 3 min or until chocolate has melted & undersides of bread are browned.
Step #13 Flip one more time & press firm- let sit 30 sec.
Step #14 Remove from heat & let sit 2 mins, slice diagonally & garnish with a light dusting of powdered sugar.
