Banana Souffles Recipe

Ingredients
  • sugar, for coating souffle dishes .
  • 3 large egg whites .
  • 2 tbsps water .
  • 2 medium bananas, ripe .
  • 1/4 tsp salt .
  • 5 tbsps sugar, divided, plus extra .
  • 1/4 tsp ground cinnamon

Directions
  • Step #1 Preheat oven to 400F degrees.
  • Step #2 Puree the bananas in a mixer or food processor/blender.
  • Step #3 In a small saucepan over med-heat/flame, mix the 4 tbs.
  • Step #4 sugar & water.
  • Step #5 Bring to a boil, stirring every once in awhile, until sugar dissolves completely.
  • Step #6 Cook without stirring for an extra min until mixture thickens slightly.
  • Step #7 Slowly stir in the the banana puree & cook this until mixture reaches a full boil.
  • Step #8 Remove from heat & stir in the the cinnamon.
  • Step #9 Allow mixture to cool slightly in the refrigerator while you prepare the ramekins.
  • Step #10 Spray 4-6oz.
  • Step #11 ramekins with nonstick cooking spray & sprinkle sugar all over the bottom & sides.
  • Step #12 Spin ramekins around to coat completely & shake out any excess sugar.
  • Step #13 Put the egg whites & salt In a large-ish bowl & beat with an electric mixer on medium speed until white & foamy.
  • Step #14 Add the remaining 1 tbs.
  • Step #15 sugar & continue to beat, increasing the speed to medium-high, until stiff peaks form.
  • Step #16 Gently fold about one-third of the egg whites into the banana mixture.
  • Step #17 Continue to fold in the remaining egg whites.
  • Step #18 Divide soufflé mixture evenly among the prepared ramekins & place them on a baking sheet.
  • Step #19 Bake for 14-16 mins, or until tops have risen & browned lightly.
  • Step #20 Serve as soon as possible.
