Ranch Sausage Cheese Dip
Ingredients
2 c provolone cheese, grated .
1 1/2 c asiago cheese, grated .
3 tbsps flour .
1/2 c flat leaf parsley, sliced (optional) .
2 c breadcrumbs (for stuffing) .
2 tbsps extra-virgin olive oil .
1/2 c parmigiano-reggiano cheese, grated .
1 lb pasta .
4 large garlic cloves, sliced .
1 c chicken stock .
3 c milk or half-and-half .
1 small yellow onion, sliced .
1 pinch nutmeg .
3/4 lb sweet Italian sausage .
4 tbsps butter, melted
Directions
Step #1 Preheat broiler on high.
Step #2 Place a large pot of water over high heat & bring up to a boil.
Step #3 Once boiling, add some salt & the pasta.
Step #4 Cook the pasta to al dente according to package directions.
Step #5 Drain & set aside.
Step #6 While the water is coming up to a boil to cook the pasta, heat the olive oil In a large-ish skillet over medium high heat.
Step #7 Add the sausage & break it up it to little pieces as it starts to cook.
Step #8 Cook sausage until brown about 4-5 mins.
Step #9 Remove sausage from the skillet & drain off all but about 3 tbsps of the fat.
Step #10 Return the skillet to the heat & add the onion & garlic, & season this with a little salt & a lot of pepper.
Step #11 Cook, stirring frequently, for 3-4 mins or until the onions start to get soft.
Step #12 Sprinkle top onions with the flour & continue to cook for about 1 min.
Step #13 Whisk in the chicken stock & milk, bring up to a simmer & season it with the nutmeg.
Step #14 Add the Asiago & provolone cheese, & stir until melted.
Step #15 Add the drained pasta & cooked sausage to the cheese sauce.
Step #16 Stir to mix, then transfer to a baking dish.
Step #17 In a bowl, melted butter, mix the bread crumbs, Parmigiano & sliced parsley.
Step #18 Toss to mix then sprinkle it over the mac & cheese in the baking dish.
Step #19 Place baking dish in the broiler & broil until the bread topping is nice & brown.
