Carrot-thyme Timbales Recipe

Ingredients
  • 1 tbsp fresh thyme, sliced fresh .
  • fresh ground black pepper .
  • 1 tbsp unsalted butter, plus extra .
  • 1 egg .
  • 1 egg yolk .
  • unsalted butter, for greasing baking dishes .
  • 1 tbsp peanut oil .
  • 1/2 c heavy cream .
  • 1 large garlic clove, thinly sliced .
  • 1/2 tsp sea salt .
  • 1 lb carrots, peeled & thinly sliced (about 7 medium)

Directions
  • Step #1 Heat the oven to 325F degrees.
  • Step #2 Butter 4 (6-oz) custard c or ramekins.
  • Step #3 Heat 1 tbsp butter & the oil in a medium saucepan.
  • Step #4 Add the carrots, stirring every once in awhile, garlic, thyme & salt & cook over med-heat/flame, for 5 mins.
  • Step #5 Add one-half c water, cover the pan, reduce the meat to medium-low & cook this until the carrots are soft, about 15 mins.
  • Step #6 Remove from the heat & cool slightly.
  • Step #7 Remove 12 carrot slices & arrange 3 over the bottom of each custard c or ramekin (you can cut them in half to make them fit).
  • Step #8 Combine the remaining carrots in a mixer with the cream & purée until completely smooth.
  • Step #9 Spice up with pepper to taste.
  • Step #10 Add the egg & egg yolk & process until smooth.
  • Step #11 Divide among the c.
  • Step #12 Place the ramekins In a large-ishr baking dish in the oven & pour in boiling water to come halfway up the sides.
  • Step #13 Bake 1 hr.
  • Step #14 Remove from the oven & let this stand 5 mins.
  • Step #15 Run a small spatula around the rim of each & turn out each onto plates to serve, sliced-carrots side up.
