Creamy Triple-mushroom Bisque With Turkey Recipe

Ingredients
  • 1/2 tsp salt .
  • 2 tbsps sliced fresh parsley .
  • 3 tbsps all-purpose flour .
  • 8 parsley sprigs (optional) .
  • 1 (16 oz) can reduced-sodium fat-free chicken broth .
  • 1 tsp dried thyme .
  • 1 (3 1/2 oz) package shiitake mushrooms, quartered .
  • 2 1/2 c sliced cooked dark turkey meat (about 12 oz) .
  • 1/8 tsp ground red pepper .
  • 2 1/2 c cooked long grain & wild rice mix (such as Uncle Ben's) .
  • cooking spray .
  • 1/2 c thinly sliced green onions .
  • 1 tsp balsamic vinegar .
  • 1 (6 oz) package presliced portabella mushrooms, halved .
  • 2 c 2% low-fat milk .
  • 1 (8 oz) package button mushrooms, quartered .
  • 1/2 c tub-style light cream cheese .
  • 1/4 c dry red wine

Directions
  • Step #1 Place a large saucepan coated with cooking spray over medium-high heat until hot.
  • Step #2 Add mushrooms; cover & cook 5 mins or until mushrooms are tender.
  • Step #3 Add turkey & next 6 ingredients (turkey through broth); bring to a boil.
  • Step #4 Cover up, reduce heat, & let simmer 20 mins.
  • Step #5 Remove from heat; stir in the onions & sliced parsley.
  • Step #6 Place flour in a small bowl, & slowly add milk, stirring constantly with a whisk until well-mixed.
  • Step #7 Add milk mixture to mushroom mixture, & bring to a boil.
  • Step #8 Cook for 1 min or until thick.
  • Step #9 Reduce heat; add rice & cream cheese, stirring until cheese melts.
  • Step #10 Garnish with parsley sprigs, if desired.
