Grilled Greek Vegetables Recipe

Ingredients
  • 2 tsps garlic, miced .
  • salt & pepper .
  • 1/4 c olive oil .
  • 1 tbsp lemon juice, fresh .
  • 1 tsp oregano .
  • 1 lb assorted fresh vegetables (eggplant, summer squash, bell peppers, mushrooms, onions)

Directions
  • Step #1 Combine olive oil, lemon juice, garlic & oregano; set aside.
  • Step #2 Cut vegetables into chunks.
  • Step #3 Toss vegetables with garlic oil to coat.
  • Step #4 Preheat grill.
  • Step #5 Place vegetables in a single layer or on a grilling rack in a covered grill over med-heat/flame.
  • Step #6 Turn once & baste with any remaining oil.
  • Step #7 Remove vegetables as they become done & keep warm.
