Calabacita Cheese Soup Recipe

Ingredients
  • 1 (14 oz) can corn (I'm guessing at the size) .
  • salt, to taste .
  • 1/2 tsp dried oregano .
  • 1 small onion, sliced .
  • 28 oz chicken broth .
  • 1 (14 oz) can Mexican-style tomatoes (I'm guessing at the size) .
  • 2 medium yellow squash, sliced .
  • 2 garlic cloves, minced .
  • 1 (4 oz) can sliced green chilies .
  • cilantro, to taste .
  • 2 medium zucchini, sliced .
  • 1 tbsp olive oil .
  • pepper, to taste .
  • 12 oz Velveeta cheese, cubed

Directions
  • Step #1 Saute onion & garlic in 1 tbsp olive oil.
  • Step #2 Add oregano, chicken broth & tomatoes.
  • Step #3 Cover up & bring to a boil.
  • Step #4 Stir in squash, corn & green chilies.
  • Step #5 Return to boil & let simmer till squash is tender.
  • Step #6 Stir in velveeta, salt, pepper & cilantro.
