Ingredients
  • 1 whole wheat English muffin, split & toasted .
  • salt, to taste .
  • pepper, to taste .
  • 1 button mushroom, sliced .
  • 1 cocktail tomato, sliced .
  • garlic powder, to taste .
  • 2 tbsps low fat cottage cheese

Directions
  • Step #1 Set toaster oven on to broil.
  • Step #2 Divide cottage cheese onto each side of toasted english muffin.
  • Step #3 Top with tomato & mushrooms, season to taste.
  • Step #4 Place under broiler until cheese begins to bubble & veggies are softened.
  • Step #5 Serve as soon as possible.
