Slow Roasted Whole Chicken Recipe

Ingredients
  • 1/2 tsp black pepper .
  • 2-3 tbsps oil .
  • 1/2 tsp onion powder .
  • 1/2 tsp garlic powder (or to taste) .
  • 1 large onion, quartered .
  • 1 (3.5-4 lb) whole chickens .
  • 1 tsp paprika .
  • 1 tbsp fresh minced garlic (can use less) .
  • 1/4 tsp dried thyme (rubbed between fingers) .
  • 1/2 tsp salt

Directions
  • Step #1 In a small bowl mix together salt, paprika, thyme, onion powder, black pepper & garlic powder.
  • Step #2 Rinse the chicken & inside cavity under cold water, then pat dry using paper towel.
  • Step #3 Rub the chicken all over with oil.
  • Step #4 Rub the inside cavity with minced garlic, then season this with white salt (or you may use the spice mixture for the cavity).
  • Step #5 Rub the outside of the chicken all over with the spice mixture.
  • Step #6 Place in a glass dish cover with plastic wrap then put in the fridge for up to 8-24 hrs.
  • Step #7 Set oven to 275 degrees.
  • Step #8 Place the chicken in a greased roasting pan, then place the onion quarters inside the cavity.
  • Step #9 Bake uncovered for about 4-1/2 hrs or until very tender.
  • Step #10 Tent the cooked chicken with foil wrap & let rest 15 mins before carving.
