Aash-e Sholeh-ghalamkar Recipe

Ingredients
  • salt .
  • 500 g beef or lamb .
  • black pepper .
  • 100 g lentils .
  • 1/2 tsp turmeric .
  • cooking oil .
  • 500 g parsley or dill or coriander or spinach or spring onions, ends .
  • vegetables .
  • 100 g peas .
  • 100 g beans .
  • 100 g basmati rice .
  • 3 large onions

Directions
  • Step #1 Soak peas, beans & lentils in water for 4-5 hrs.
  • Step #2 Peel & chop onions & fry in oil until slightly golden.
  • Step #3 Cut meat into small pieces & fry with onions until it changes colour.
  • Step #4 Add peas, turmeric, pepper & hot water, lentils, salt, beans, & cook over low heat/flame for about one hr.
  • Step #5 Wash rice & add to the aash.
  • Step #6 Cook for another 20-30 mins.
  • Step #7 Wash vegetables & chop finely.
  • Step #8 Add to aash & cook for another 10-15 mins, stirring frequently.
  • Step #9 Add more hot water during cooking if necessary.
