Cheyenne Buffalo Medicine Sausage Recipe

Ingredients
  • pork sausage casings (3 yards) .
  • salt .
  • 1 1/2 lbs ground buffalo meat or lean beef .
  • 8 oz fresh sage .
  • pepper .
  • 2 tbsps fat or vegetable oil, see note

Directions
  • Step #1 The recipe calls for 2 tbsp rendered fat.
  • Step #2 Spice up the meat with the salt & pepper & stuff the casing carefully.
  • Step #3 Do NOT puncture the casing.
  • Step #4 Tie into 5 inch lenths.
  • Step #5 Roast at 375F oven for 15 to 20 mins or fry in the rendered fat until cooked completely.
  • Step #6 Place half the sage on the aluminum foil wrap.
  • Step #7 Place sausage on top & cover with remaining sage.
  • Step #8 Wrap tightly & let cool for 1 1/2 hrs.
  • Step #9 Unwrap & serve.
