Chocolate Bottom Mini Cupcakes Recipe

Ingredients
  • 1 tbsp vinegar
  • 1 egg
  • 1/3 c vegetable oil
  • 1 tsp salt
  • 1/3 c sugar
  • 1 c water
  • 1 c sugar
  • 1 (8 oz) package cream cheese, softened
  • 1 c semisweet chocolate chips
  • 1/8 tsp salt
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • FILLING:
  • 1/4 c baking cocoa
  • 1 1/2 c all-purpose flour
  • BATTER:

Directions
  • Step #1 In a mixing bowl, beat cream cheese, egg, sugar & salt until smooth.
  • Step #2 Stir in chocolate chips; set aside.
  • Step #3 For batter, oil, mix water, vinegar & vanilla in another mixing bowl.
  • Step #4 Combine remaining ingredients; add to the liquid mixture & beat well (batter will be thin).
  • Step #5 Spoon about 2 tsps of batter into greased or paper-lined miniature muffin c.
  • Step #6 Top with about 1 tsp of filling.
  • Step #7 Bake at 350 degrees F for 18-23 mins or until a toothpick inserted in chocolate portion comes out clean.
  • Step #8 Cool for 10 mins; remove to wire racks to cool completely.
  • Step #9 .
