5-minute Crock-pot Burritos Recipe

Ingredients
  • 8-10 flour tortillas or corn tortillas .
  • 3 c prepared chunky salsa, divided (use mild, medium or hot) .
  • 1 tbsp fresh cilantro leaves (snipped or sliced) .
  • 1 c grated cheddar cheese or colby-monterey jack cheese .
  • 1 (3 lb) pork sirloin roast .
  • 2 tsps southwest seasoning

Directions
  • Step #1 Rub Southwest seasoning on both sides of pork & place this in slow cooker (aka crockpot).
  • Step #2 Pour 2 c salsa over pork, cover & cook on low for 6 to 8 hrs.
  • Step #3 Using two forks, shred pork.
  • Step #4 Meanwhile, wrap tortillas in aluminum foil wrap & heat in a 350-degree oven for 20 mins or until heated through.
  • Step #5 Spoon pork mixture onto center of each tortilla & top this with extra salsa, cheese & cilantro.
  • Step #6 Broil 1 min or until cheese is bubbly.
  • Step #7 Roll up like a burrito to eat.
  • Step #8 Serve with black beans & Spanish rice.
