Asian-style Asparagus Slaw Recipe

Ingredients
  • 1 small carrot, very finely shredded .
  • 1/4 small red onion, thinly sliced .
  • 1 lb asparagus .
  • 1 tbsp toasted sesame oil .
  • 1/4 tsp white pepper, freshly ground .
  • 4 c green cabbage, very finely shredded .
  • 1 c red cabbage, very finely shredded .
  • 2 tbsps sweetened rice vinegar .
  • 1/4 c parsley, freshly snipped

Directions
  • Step #1 Snap off & discard fibrous stem ends of asparagus.
  • Step #2 Rinse asparagus; drain.
  • Step #3 Bring 1 inch of water to boiling in a medium saucepan.
  • Step #4 Place asparagus in steamer basket; cover & steam for 4 mins or until asparagus is crisp-tender.
  • Step #5 Drain; carefully rinse with cool water.
  • Step #6 Combine green cabbage, red cabbage, carrot, parsley & onion In a large-ish bowl.
  • Step #7 Mix sesame oil, rice vinegar & salt together in small bowl; add to cabbage mixture & toss to coat.
  • Step #8 Divide asparagus spears among six salad plates; top this with cabbage mixture.
