Ila's Honey Cinnamon Buns Recipe

Ingredients
  • 1 tbsp water .
  • 1/4 c powdered milk .
  • Honey Schmear .
  • Bun Finish .
  • 1 1/2 c powdered sugar .
  • 3/4 c light brown sugar, packed .
  • 1 c water .
  • 1/4 c milk .
  • 1/2 c sugar .
  • 2 tsps cinnamon .
  • 2 tbsps light corn syrup .
  • 4 tbsps unsalted butter, softened at about room temp .
  • 1 3/4 tsps salt .
  • Dough .
  • 5 tbsps unsalted butter, cut into pieces & softened at about room temp .
  • 1 tsp cinnamon .
  • 1 oz fresh yeast (or 2 1/4-oz packets dry yeast) .
  • 2 tbsps honey .
  • 3 c bread flour .
  • 4 tbsps unsalted butter, melted .
  • 5 tsps sugar

Directions
  • Step #1 Dough: In a mixer fitted with a dough hook, mix all the ingredients for the dough.
  • Step #2 Mix at lowish speed for 2 mins, then increase the speed to medium & mix for another 6 mins.
  • Step #3 To test if the dough is ready, stretch a small piece of dough between your hands into a thin sheet & hold it up to the light.
  • Step #4 If you see a web-like pattern, the dough is developed; the webs are the strands of gluten.
  • Step #5 If you do not see them, mix the dough at medium speed 2 mins more, then test again.
  • Step #6 Transfer the dough to a bowl, cover with a damp cloth, & put in the fridge at least 2 hrs or over night.
  • Step #7 Honey Schmear: In a mixer, mix the brown sugar, honey, butter, corn syrup & cinnamon until smooth.
  • Step #8 Add the water & mix until smooth, adding more water as needed to make the mixture spreadable.
  • Step #9 Bun Finish: Butter 10 c of a large muffin tin.
  • Step #10 Spoon 2 tbsps of the honey schmear into the bottom of each c.
  • Step #11 In a small bowl, mix the sugar & cinnamon.
  • Step #12 On a lightly floured surface, roll the dough into a 10-by-10-inch square about 1/4- inch thick.
  • Step #13 Brush with the melted butter & sprinkle with the cinnamon sugar.
  • Step #14 Using your hands, firmly roll up the dough like a jellyroll.
  • Step #15 Transfer to a sheet pan & put in the fridge 30 mins.
  • Step #16 Using a sharp knife or a taut length of dental floss, cut the dough into 10 slices, each about 1 inch thick.
  • Step #17 Place one slice (on its cut side) in each muffin c.
  • Step #18 Cover up with a damp cloth, & let rise in a warm place until they reach the rim of the pan, about 1 to 1 1/2 hrs.
  • Step #19 (Or, cover & let rise in the refrigerator overnight.
  • Step #20 ) Preheat the oven to 350 degrees F.
  • Step #21 Bake until golden brown, 25 to 30 mins.
  • Step #22 Meanwhile, line a sheet pan with parchment paper.
  • Step #23 Let the buns cool in the pan for 2 mins, then flip the pan over onto the sheet pan.
  • Step #24 Carefully lift off the muffin pan, leaving the buns & toppings on the sheet pan.
  • Step #25 Let cool.
  • Step #26 Meanwhile mix together the powdered sugar & milk to make a glaze.
  • Step #27 With a spoon drizzle the glaze over the top of the buns.
