3 c cooked rice (use your favorite method to cook) .
2 (15 oz) cans kidney beans, drained & rinsed (black beans would work too) .
1 (10 1/2 oz) bag baked corn tortilla chips (or use Homemade Baked Chips (Tortilla or Pita)) .
2 medium green peppers (julienned) .
1 tsp vegetable oil .
2 medium onions (sliced) .
6 c shredded lettuce (about 1 head) .
low-fat sour cream (to garnish) .
1 1/2 c shredded low-fat cheddar cheese (6 oz by weight) .
2 (11 oz) cans Mexican-style corn, drained .
1 (16 oz) jar salsa (you choose the heat level)
Directions
Step #1 Heat oil In a large-ish skillet over medium-high heat.
Step #2 Add green peppers & onions.
Step #3 Cook till tender-crisp.
Step #4 Add salsa, beans, corn & rice.
Step #5 Cook till thoroughly heated.
Step #6 To Serve: For each serving -- Place 1 c lettuce on serving plate, top this with warm vegetable mixture, surround lettuce with tortilla chips, sprinkle 1/4 c cheese evenly on top of each serving & garnish with sour cream.
Step #7 If your diet can bear it, some sliced avocado would also be a wonderful addition.
