Sweet Lemon And Goat Cheese Tart Recipe

Ingredients
  • 4 eggs, beaten .
  • 2 lemons, juice & rind of .
  • 100 g rindless fresh goat's cheese, roughly sliced .
  • 140 g caster sugar (superfine) .
  • 200 ml creme fraiche .
  • 500 g ready made shortcrust pastry

Directions
  • Step #1 Heat oven to 160 degrees C, Gas mark 4.
  • Step #2 Roll out pastry & line a 20 cm loose-bottom tart tin.
  • Step #3 Chill 30 mins.
  • Step #4 Line pastry with creesproof paper & fill with baking beans.
  • Step #5 Bake 'blind' 15 mins, remove this from oven, & take out paper & beans.
  • Step #6 Brush inside of crust with a little of the beaten egg, then return to oven for 5 more mins to crisp.
  • Step #7 Remove from oven.
  • Step #8 Reduce heat of oven to 130 degrees C, gas mark 2.
  • Step #9 In a medium bowl, stir lemon juice & peel & sugar together until dissolved.
  • Step #10 Beat in remaining eggs & creame fraiche.
  • Step #11 Tip into a jug (unless your bowl has a pouring spout).
  • Step #12 Put tart case on baking sheet & place on oven rack.
  • Step #13 Pour in lemon mixture.
  • Step #14 Sprinkle top over crumbled goat cheese & back 1 hr.
  • Step #15 The tart should be set, but wobble slightly (you may need to cook 10 mins more).
  • Step #16 Serve warm or cold.
