Prawn And Rice Salad Recipe

Ingredients
  • 2 spring onions .
  • 225 g cooked prawns .
  • 1/2 tsp mixed herbs (or use your own from the garden) .
  • salt & pepper .
  • 1 green capsicum .
  • 130 g long grain rice .
  • 2 tomatoes .
  • 1 tbsp lemon juice .
  • parsley (to garnish) (optional) .
  • 150 ml olive oil

Directions
  • Step #1 Cook the rice in boiling, slated water until just tender.
  • Step #2 Drain, & rinse well in cold water.
  • Step #3 Shake well to remove any excess water.
  • Step #4 Combine oil, lemon juice & herbs & season well.
  • Step #5 Mix this dressing into the rice, whilst the rice is still warm.
  • Step #6 Leave to cool.
  • Step #7 Chop spring onions & capsicum finely.
  • Step #8 Cover up tomatoes with boiling water & leave for a couple of mins.
  • Step #9 Drain water & remove tomato skins.
  • Step #10 Chop finely.
  • Step #11 Add prawns to the tomato, onion & capsicum & then mix well with the rice.
  • Step #12 Pile on to a serving dish & scatter sliced parsley over the top.
