Step #1 In a large bowl, dissolve the yeast & 1 Tablespoon of sugar in the water.
Step #2 Whisk until completely mixd.
Step #3 Add vegetable oil & whisk.
Step #4 Then add 4 of the eggs, whisking for about one min after each egg is added.
Step #5 Whisk in remaining sugar & salt.
Step #6 Add flour one c at a time, mixing with a sturdy spoon after each c.
Step #7 When all of the flour has been added, turn dough onto floured surface & knead the dough to remove all lumps.
Step #8 Clean out bowl & grease it.
Step #9 Form dough into a ball & return it to the bowl.
Step #10 Let dough rise for one hr in a warm.
Step #11 The dough should approximately double in size.
Step #12 Punch it down & then put chocolate chips in center of dough & reform dough into a ball so that the chocolate chips are encased in the center of the dough.
Step #13 Allow to rise for another 30 mins.
Step #14 Remove dough from warm spot & place dough ball onto floured surface.
Step #15 Using a long serated knife, cut the dough in half & then cut each halve into thirds.
Step #16 Reform all six dough balls so that the chocolate is encased in the center of each ball.
Step #17 Then, using your hands, roll out each ball into a strand approximately 15 inches in length.
Step #18 Take three strands & pinch them together at one end, tucking the pinched ends under the bread.
Step #19 Braid the three strands together.
Step #20 When you get to the end of the strands, pinch the strands together & tuck under loaf.
Step #21 Repeat for remaining three strands to create a second loaf.
Step #22 Lightly grease a large baking sheet.
Step #23 Gently transfer the challahs to the baking sheet.
Step #24 Whisk remaining egg in a small bowl & brush generously onto each challah.
Step #25 Return loafs to warm spot to rise for another 30 mins.
Step #26 Preheat oven to 375.
Step #27 Brush challahs with second round of egg wash.
Step #28 Be sure to get egg wash into all the cracks & crevices.
Step #29 Place loaves into oven on middle rack.
Step #30 Fill a baking dish or roasting pan with about two inches of water.
Step #31 Place dish on the rack below the challahs.
Step #32 Bake the challahs for thirty mins, rotating the baking sheet once in the middle of baking time.
Step #33 Challahs should have a medium golden brown crust & sound hollow when tapped.
Step #34 Be sure to check challahs near end of baking time in order to avoid over cooking.
Step #35 Continue cooking past 30 mins if challahs aren't golden brown yet.
Step #36 Cool challahs completely on wire baking rack.
