Crock Pot Peppercorn Pork Recipe

Ingredients
  • 1 apple (cut into thin wedges) .
  • 1/2 tsp lemon peel (grated) .
  • 1 c apple cider .
  • 2 tbsps green peppercorns (drained) .
  • 1/4 tsp salt .
  • 3 tbsps cornstarch .
  • 3 tbsps sweet-hot mustard .
  • 1 tsp horseradish .
  • 3 lbs lean pork roast .
  • 1/4 c cold water

Directions
  • Step #1 In small bowl, horseradish, mix peppercorns, mustard, lemon peel & salt.
  • Step #2 Spread on top & sides of pork roast.
  • Step #3 Place metal rack in bottom of slow-cooker; pour in cider.
  • Step #4 .
  • Step #5 Place coated pork roast on rack in slow-cooker.
  • Step #6 Cover up & cook on LOW 9-10 hrs.
  • Step #7 Then turn on HIGH.
  • Step #8 Remove pork & rack; cover & keep warm.
  • Step #9 In small bowl, mix water & cornstarch; stir until smooth.
  • Step #10 Add to drippings in pot.
  • Step #11 Cook on HIGH 20-30 mins or until thickened, stirring every once in awhile.
  • Step #12 Slice roast; garnish with apple wedges.
  • Step #13 Serve pork with sauce.
