Thai-style Chicken Skillet Recipe

Ingredients
  • 2 tbsps creamy peanut butter .
  • 1 (5 oz) package chicken & broccoli flavor Rice-a-Roni .
  • 1 1/2 c snow peas, frozen .
  • 1/2 c red peppers, cut into 2-inch strips .
  • 3/4 lb boneless skinless chicken breast halves, cut into thin slices .
  • 1/2 c peanuts (optional) .
  • 1 3/4 c water .
  • 2 tbsps soy sauce .
  • 1 garlic clove, minced

Directions
  • Step #1 Toss chicken with soy sauce; set aside.
  • Step #2 In large skillet over med-heat/flame, saute rice-vermicelli mix according to package directions.
  • Step #3 Slowly stir in the 1 3/4 c water, peanut butter, seasoning packet, & garlic.
  • Step #4 Stir in the chicken & bring to a boil.
  • Step #5 Cover up, reduce heat to low, & let simmer for 12 mins.
  • Step #6 Stir in snow peas & pepper; return to simmer.
  • Step #7 Cover up & let simmer for 3 to 5 mins until the vegetables are crisp-tender.
  • Step #8 Stir & let this stand for about 3 mins.
  • Step #9 Garnish with peanuts if desired, then serve.
