Saunfia Paneer Tikka (cottage Cheese Squares In Funnel Seed) Recipe

Ingredients
  • 2 tsps oil .
  • salt .
  • 1 1/2 tsps chat masala .
  • 1 tsp white pepper powder .
  • 1 tbsp lemon juice .
  • 500 g cottage cheese (paneer) .
  • 1/2 tsp fennel (Lucknowi saunf powder) .
  • 1/2 tsp turmeric powder .
  • 1 tbsp lemon juice .
  • 1 c fresh cream .
  • 2 medium capsicums .
  • 3-5 saffron strands (kesar) .
  • 2 tbsps gram flour (besan) .
  • butter, for basting .
  • 5 garlic cloves .
  • 1/2 tsp cardamom powder .
  • 3/4 inch piece gingerroot

Directions
  • Step #1 Wash & cut paneer into one & a half inch sized squares of half-inch thickness.
  • Step #2 Peel, wash & grind ginger & garlic.
  • Step #3 Wash, remove stalk, halve, deseed & cut capsicums into one & a half inch sized squares.
  • Step #4 Heat oil in a pan.
  • Step #5 Add besan & cook this until it emits a fragrant aroma, remove this from heat & add turmeric powder.
  • Step #6 Cool flour & transfer into a bowl.
  • Step #7 Add ginger-garlic paste, fennel powder, green cardamom powder, white pepper powder, lemon juice, salt, saffron & fresh cream.
  • Step #8 Whisk well to make a batter.
  • Step #9 Add paneer cubes to the batter & marinate for at least an hr.
  • Step #10 Thread paneer cubes & caspicum squares onto skewers.
  • Step #11 Roast in a tandoor/charcoal grill for five mins, basting with melted butter every once in awhile till the tikkas are golden in colour.
  • Step #12 Alternatively you can cook the tikkas in a convection oven or on a grill.
  • Step #13 Preheat the oven to 220°C & cook for three mins on either side, basting once with butter in between.
  • Step #14 Remove & sprinkle with chaat masala powder & lemon juice.
  • Step #15 Serve with chutney of your choice.
