Easy Crispy Coconut Prawns (shrimp) Recipe

Ingredients
  • 250 g dried shredded coconut .
  • 3 eggs .
  • 1 kg green prawns .
  • 1 c rice flour

Directions
  • Step #1 Peel & devein the prawns, leaving the tail intact.
  • Step #2 Place the rice flour, lightly whised eggs & coconut into seperate bowls.
  • Step #3 Ensure the prawns are fully covered in the rice flour.
  • Step #4 Then one prawn at a time dip them into the lightly whisked egg mix & then press firmly into the coconut to coat evenly.
  • Step #5 Deep fry for 1 to 2 mins or until lightly browned.
  • Step #6 It's best to do small batches at a time.
  • Step #7 Serve with a dipping sauce or flavoured mayonnaise.
