Maine Wild Blueberry Salsa Recipe

Ingredients
  • 2 tbsps sliced fresh cilantro .
  • 2 tbsps rice vinegar .
  • 1 jalapeno pepper, finely sliced .
  • 1 c wild blueberries (fresh or frozen) .
  • 2 medium heirloom tomatoes .
  • 3/4 c sliced sweet onions .
  • 2 tbsps sliced flat-leaf Italian parsley .
  • 2 tbsps olive oil .
  • 2 garlic cloves, minced .
  • 1/2 hungarian hot pepper, finely sliced .
  • salt & pepper

Directions
  • Step #1 Bring a pot of water to a boil.
  • Step #2 Score the skin of the tomatoes by slicing an X into the skin on the bottom.
  • Step #3 Immerse the tomatoes in boiling water for about 15 seconds.
  • Step #4 Remove & place this into a bowl of cold water.
  • Step #5 The skins should slip off easily.
  • Step #6 Peel the tomatoes, cut in half & remove the seeds.
  • Step #7 Chop the tomatoes & discard the seeds.
  • Step #8 In a medium bowl, jalapeno pepper, onion, Hungarian pepper, garlic, mix the tomatoes, blueberries, cilantro & parsley.
  • Step #9 Pour in the rice vinegar & olive oil & stir carefully to mix.
  • Step #10 Spice up with salt & pepper.
  • Step #11 Cover up & store this in the refrigerator overnight to allow the flavors to mix.
  • Step #12 You may wish to drain the salsa slightly before serving, depending on how juicy your tomatoes are.
  • Step #13 ***Cook time doesn't include overnight refrigeration.
