Rice Noodles And Chicken Soup Recipe

Ingredients
  • 2 stalks spring onions, sliced .
  • 400F g dry rice noodles (see note below) .
  • 1/2 c cooking oil .
  • 3 tomatoes, cut into wedges .
  • 2 stalks lemongrass .
  • Garnished .
  • 2 tsps sugar .
  • Pounded ingredients .
  • salt .
  • 3 candlenuts or 2 tbsps ground almonds .
  • 2 inches ginger .
  • 1 chicken, cut into small pieces (16) .
  • 3 c water .
  • 1 red chili, thinly slice & (optional) or hot pepper, thinly slice & soaked in light soy sauce (optional) .
  • 1 inch fresh turmeric or 1 tsp turmeric powder .
  • 3 limes, halved .
  • 2 c fresh bean sprouts .
  • 4 fresh red chilies .
  • 1 c thick coconut milk .
  • 1 large white onion, sliced .
  • 1/2 c sliced shallots, fried crisp & brown

Directions
  • Step #1 Soak rice noodles in boiling water until soft & drained.
  • Step #2 Heat oil in saucepan, fry lbed ingredients untilfragrant.
  • Step #3 Add chicken & stir-fry for 2 minuntes.
  • Step #4 Add waterand cook this until chicken is done.
  • Step #5 Add coconut milk, tomatoes & seasoning.
  • Step #6 ingredients.
  • Step #7 Bring to boil & let simmer for 5 mins.
  • Step #8 Remove from heat.
  • Step #9 Place rice noodles in individual serving bowl.
  • Step #10 Spoon soup over noodles & garnish with bean sprout,fry shallot, spring onions & limes.
  • Step #11 Serve hot.
