Springtime Shrimp With Lemon, Thyme & Bow -tie Pasta Toss Recipe

Ingredients
  • 8 oz bow tie pasta, cooked & drained .
  • 1/2 c finely grated parmesan cheese .
  • 1 medium broccoli, crown cut into florets .
  • 1/2 c good dry white wine .
  • 1 sprig fresh thyme .
  • 1 tbsp lemon zest .
  • 2 tbsps extra virgin olive oil .
  • kosher salt & freshly ground black pepper .
  • 12 oz frozen baby peas .
  • 4 tender spring green onions, white part sliced, thinly slice green part & reserve .
  • 2 tbsps butter, divided 1 tbsp each .
  • 3 tbsps fresh lemon juice .
  • 1/4 tsp crushed red pepper flakes .
  • 1 lb large peeled & deveined cooked shrimp

Directions
  • Step #1 Bring a large pot of water to boil for pasta; cook bowtie until al dente.
  • Step #2 Toss with a bit of olive oil & keep warm.
  • Step #3 Heat large skillet over med-heat/flame, adding 1 tbsp olive oil, then butter.
  • Step #4 Add green onion (save a bit of the green part for later), broccoli, lemon zest,white wine & red pepper flakes.
  • Step #5 Spice up lightly with salt & pepper, toss together.
  • Step #6 Cover up skillet & cook a few mins & broccoli is bright green.
  • Step #7 Add peas, cook a few mins, keeping their bright color.
  • Step #8 Add shrimp & toss carefully, cooking about 2 mins until shrimp are heated through.
  • Step #9 Add lemon juice,green onion, sprig of thyme & remaining butter & olive oil.
  • Step #10 Place warm pasta in serving bowl, sprinkle with salt, pepper & 1/4 c parmesan cheese.
  • Step #11 Remove sprig of thyme; add shrimp & vegetable mixture.
  • Step #12 Toss lightly, sprinkle with remaining parmesan & serve.
