Breakfast Parfaits Recipe

Ingredients
  • 2 c fresh strawberries, sliced .
  • 8 oz crushed pineapple in juice, undrained .
  • 1 c oatmeal, uncooked .
  • 16 oz low-fat peach yogurt or low-fat vanilla yogurt

Directions
  • Step #1 In medium bowl, yogurt & pineapple with juice, mix raw oats, mix well.
  • Step #2 Cover up & put in the fridge overnight or up to 1 week.
  • Step #3 When ready to serve, layer the mixture & strawberries in parfait glasses & garnish with a strawberry on top - I just put it in a small bowl with all the berries on top.
  • Step #4 This is good with bananas or a mixture of both fruits or your favorite fruit.
  • Step #5 The original recipe said 4 servings, but they were way too big for us & I think it is more like 6-8 servings.
