Ingredients
  • meatballs .
  • MEATBALLS .
  • 1 c fresh herbs (your choice, dill, parlsey, sage, rosemary, thyme...) .
  • 1 lb ground beef .
  • 2 whole head of garlic, unpeeled, halved horizontally .
  • 3 gallons water .
  • 1/2 c quick oatmeal .
  • 1 bunch celery, ends trimmed, halved .
  • salt & pepper .
  • 4 garlic cloves, minced .
  • 1 lb carrots, ends trimmed, unpeeled, halved .
  • 1 onion, sliced .
  • 1 tsp salt .
  • 1/2-1 c parmesan cheese (to taste) .
  • 1 (28 oz) can whole tomatoes .
  • 1/4 c parsley, sliced .
  • 1 onion, minced .
  • 4 white onions, unpeeled, quartered .
  • 8 c stock .
  • 1 tbsp ground black pepper .
  • 1/4 c grated parmesan cheese .
  • 2 carrots, thinly sliced .
  • 2 eggs .
  • 2 tbsps salt .
  • 2 tbsps whole black peppercorns .
  • 1/2 c minced parsley .
  • SOUP .
  • 1 chicken (whole or cut into pieces) .
  • 2 garlic cloves, minced .
  • 1 1/2 c corn .
  • STOCK

Directions
  • Step #1 Combine all stock ingredients in a very large stockpot.
  • Step #2 Bring to a boil & simmer 1 1/2 hrs.
  • Step #3 Remove chicken to a strainer set over a large bowl.
  • Step #4 When cooled, pick meat off bones & reserve for another use.
  • Step #5 Let vegetables simmer another hr then strain.
  • Step #6 The liquid should be significantly reduced.
  • Step #7 While stock is blissfully simmering away, make meatballs.
  • Step #8 Preheat oven to 350°F.
  • Step #9 Combine all meatball ingredients well with your hands.
  • Step #10 Shape into 1" balls.
  • Step #11 You should get about 2 dozen.
  • Step #12 Place on a baking sheet & bake 15 mins.
  • Step #13 Roll around on baking tray & bake another 15 mins.
  • Step #14 When stock is done & strained, put 8c into a large soup pot.
  • Step #15 Reserve the rest for a myriad of other dishes.
  • Step #16 It also freezes very well.
  • Step #17 Add all the vegetables to the stock.
  • Step #18 Bring to a boil & simmer until veggies are tender - about 15 mins - breaking up the tomatoes a bit as it simmers.
  • Step #19 Add meatballs & heat through another 10 mins.
  • Step #20 Taste for seasoning; add salt & pepper as necessary.
  • Step #21 Add parsley & serve.
  • Step #22 We enjoyed this garnished with freshly grated parmesan cheese.
