Navy Bean Soup Recipe

Ingredients
  • 2 stalks celery, sliced .
  • pepper .
  • morton's nature's seasoning or other all-purpose seasoning .
  • salt .
  • 1 (11 oz) can chicken broth .
  • 2 (16 oz) cans navy beans .
  • 4 green onions, sliced .
  • 1 medium onion, sliced .
  • 2 slices bacon, left whole .
  • 1 garlic clove .
  • 1 large carrot, sliced

Directions
  • Step #1 In the bottom of your pot, carrot, saute celery, onion, garlic, & bacon until the bacon is cooked through & the vegetables are soft.
  • Step #2 Add navy beans & chicken broth to the vegetables.
  • Step #3 Simmer until heated through.
  • Step #4 Add seasoning to taste.
  • Step #5 Bring to a boil, then lower heat & let simmer for 20 mins or so.
  • Step #6 If soup gets too thick, add more chicken broth.
  • Step #7 Discard bacon.
  • Step #8 Remove half of soup & place this in a mixer or food processor/blender.
  • Step #9 Pulse a few times & add mixture back to the pot.
  • Step #10 Serve with fresh sliced green onions.
  • Step #11 Can substitue other fresh onions if desired.
  • Step #12 Diced ham may be substituted for bacon & left in the soup.
