Lima Bean-fresh Herb Pate Recipe

Ingredients
  • 1/4 tsp pepper .
  • 1 c ricotta cheese .
  • 2 tbsps sliced fresh chives .
  • 2 garlic cloves .
  • 3 tbsps fresh lemon juice .
  • 1 (15 oz) can lima beans, rinsed & drained .
  • 2 tbsps sliced fresh parsley .
  • 2-3 tsps sliced fresh dill .
  • 3/4 tsp salt .
  • 2 tbsps extra-virgin olive oil

Directions
  • Step #1 Add first 7 ingredients to a food processor/blender; process until smooth, stopping to scrape down sides.
  • Step #2 Add in chives, parsley, & dill; process until mixd.
  • Step #3 Spoon mixture into a lightly greased 2-c bowl lined with plastic wrap; cover & chill 8 hrs.
  • Step #4 Unmold pate; discarding plastic wrap; place on a serving dish.
