Mediterranean Tomato Loaf Recipe

Ingredients
  • 2 eggs .
  • 1/2 tsp pepper .
  • 1/4 c fresh oregano or 1 tbsp dried oregano .
  • 1/2 c sun-dried tomatoes packed in oil, blotted & sliced .
  • 1 1/2 tsps baking powder .
  • 2 c flour .
  • 3/4 c ricotta cheese .
  • 1 tsp baking soda .
  • 1 tbsp sugar .
  • 1 c tomato juice .
  • 1/4 c oil .
  • 2 tbsps fresh basil or 3/4 tsp dried basil .
  • 1/2 c feta cheese, crumbled

Directions
  • Step #1 Measure flour, baking powder, sugar, baking soda & pepper In a large-ish bowl.
  • Step #2 Stir make well in centre.
  • Step #3 Combine eggs tomato juice, sun dried tomatoes oil, basil & oregano in a meduim bowl whisk, crumbled feta, ricotta cheese,.
  • Step #4 Add to well.
  • Step #5 Stir until just moistened.
  • Step #6 Spread in greased 9x5x3 in loaf pan.
  • Step #7 Brush with reserved oil from sun-dried tomatoes.
  • Step #8 Bake in 350 oven for 50 mins, or until toothpick comes out clean.
  • Step #9 Let cool in pan for 10 mins before removing to wire rack to cool.
