French Canadian Pea Soup Recipe

Ingredients
  • 1 c celery, sliced .
  • 2 tbsps butter .
  • 1 c sliced onions .
  • 1/2 c half-and-half cream or whipping cream .
  • 1 lb dried split peas .
  • 1/4 tsp pepper .
  • 8 c water .
  • 1 tsp chicken bouillon .
  • 1 c carrots, sliced .
  • 2 slices cooked bacon .
  • 1 meaty ham bone

Directions
  • Step #1 Rinse peas.
  • Step #2 In heavy pot mix peas, salt, onion, ham bone, pepper & onion with 8 c of water.
  • Step #3 Bring to boil, reduce heat & cover.
  • Step #4 Simmer for 1 ½ hrs stirring often.
  • Step #5 Remove ham bone from heat & chop meat.
  • Step #6 Return meat to pot, add vegetables & let simmer 30 mins.
  • Step #7 Add cooked crumbled bacon, cream & butter.
  • Step #8 Heat through & serve.
