Chicken And Dumpling Soup Recipe

Ingredients
  • 2 (14 1/2 oz) cans chicken broth .
  • 1/8 tsp salt .
  • 1 tbsp olive oil or cooking oil .
  • 1/2 c milk .
  • 1 c fresh green beans, cut into bite-size pieces .
  • 1/8 tsp pepper .
  • 2 tbsps all-purpose flour .
  • DUMPLINGS .
  • 1/4 tsp dried marjoram, crushed .
  • 1/3 c yellow cornmeal .
  • 1/4 c cheddar cheese, shredded .
  • 2/3 c reduced-fat baking mix .
  • 1 medium onion, sliced .
  • 1 c sliced carrots .
  • 12 oz boneless chicken

Directions
  • Step #1 Spice up chicken with salt & pepper.
  • Step #2 Add oil to large saucepan & cook chicken over medium-high heat for about 2 mins or until chicken is cooked through.
  • Step #3 Sprinkle top flour & marjoram over chicken.
  • Step #4 Stir in broth, onion, beans & carrots.
  • Step #5 Bring to boil, then reduce to simmer, cover & cook 30 mins.
  • Step #6 For Dumplings: In medium mixing bowl stir this together biscuit mix, cornmeal & cheese.
  • Step #7 Stir in milk until just moistened.
  • Step #8 Drop batter into hot soup, making 8 dumplings.
  • Step #9 Return to boiling, then reduce heat, cover & cook 10-12 mins.
  • Step #10 Do not lift lid while dumplings cook.
  • Step #11 Use a toothpick to check dumplings for doneness.
  • Step #12 If toothpick comes out clean, dumplings are ready.
