Chicken And Sausage Paella Recipe

Ingredients
  • 2 garlic cloves, finely sliced .
  • salt & pepper .
  • 1 bay leaf .
  • 1 tsp paprika .
  • 4 c chicken broth .
  • 1 onion, sliced .
  • 1 lemon, cut into wedges .
  • 3 tbsps fresh parsley, sliced .
  • 1 red bell pepper, cut into thin strips .
  • 2 tbsps olive oil .
  • 2 c fresh peas .
  • 4 sweet sausages, cut into 1/2-inch slices .
  • 1 1/2 c short-grain white rice .
  • 1 large chicken, cut up

Directions
  • Step #1 Preheat the oven to 325F degrees F.
  • Step #2 In a saucepan, heat the broth over moderate heat; keep warm.
  • Step #3 In a large, shallow skillet or a paella pan, heat 1 tbsp of the oil over moderate heat.
  • Step #4 Sprinkle top the chicken pieces with salt & pepper, add to the skillet & saute for about 5 mins on each side, or until golden brown.
  • Step #5 Remove & drain.
  • Step #6 Add the garlic & sausage slices to the pan & saute for about 2 to 3 mins on each side, or until brown.
  • Step #7 Remove the sausage, drain on paper towels & set aside.
  • Step #8 Place the skillet back over moderate heat & add the remaining tbsp of oil if needed.
  • Step #9 Add the onion & red pepper & saute for about 5 mins, or until the onion is golden brown.
  • Step #10 Add the rice & stir this to coat it well with the oil & vegetables.
  • Step #11 Add the parsley & the bay leaf & stir in the the warm broth & the peas.
  • Step #12 Bring to a boil & cook, over moderately high heat for about 10 mins, uncovered, stirring every once in awhile.
  • Step #13 Mix in the chicken & sausage.
  • Step #14 Sprinkle top the dish with paprika.
  • Step #15 Place the paella in the oven & bake, uncovered, for about 20 mins or until the rice is cooked.
  • Step #16 Serve with lemon wedges.
