Ginger Orange Nut Balls Recipe

Ingredients
  • 2/3 c orange juice .
  • 1/2 c triple sec (optional) or Grand Marnier (optional) .
  • 1 c finely sliced almonds .
  • 2 (7 oz) packages flaked coconut (2 2/3 c) .
  • 1 c raisins .
  • 1 c dates, sliced .
  • 1 c finely sliced walnuts .
  • 2 tbsps grated orange rind .
  • 1/2 c rum (optional) .
  • 2 (7 oz) packages flaked coconut (for dredging) .
  • 2 oranges, rind of, grated (for dredging) .
  • 2 (20 oz) packages gingersnap cookies, finely crushed (about 10 c crumbs) .
  • 2 (14 oz) cans condensed milk

Directions
  • Step #1 Use a food processor/blender to finely crush the cookies.
  • Step #2 In a large mixing bowl mix all ingredients except extra coconut & rind.
  • Step #3 Chill at least one hr.
  • Step #4 The mixture should be fairly firm but sticky.
  • Step #5 Combine dredging ingredients in a shallow plate such as a pie plate.
  • Step #6 Shape ball batter into 1 inch balls.
  • Step #7 The easiest way to do this is with a small 2 tsp scooper.
  • Step #8 Roll in extra coconut mixed with rind.
  • Step #9 Store tightly covered in refrigerator.
  • Step #10 The flavor of these candies improves after several days.
  • Step #11 I usually give it at least one week.
  • Step #12 They can be made ahead & stored in the refrigerator for several weeks.

  • Step #14 If you want to omit the alcohol you should only use 2 packages of ginger snaps.
  • Step #15 The balls should sit for 24 hrs to let flavors mix.
  • Step #16 You can use all almonds or all walnuts.
  • Step #17 Omit the dates & use 2 c raisins if you prefer.
  • Step #18 Dredge the balls in extra crushed ginger snaps mixed with confectioners sugar if you prefer.
