Ingredients
1 1/3 c lowfat refried beans .
1 c cooked brown rice .
8 small soft whole wheat tortillas, warmed .
1/2 c sliced yellow onions .
1 c low-fat tomato soup .
2 c shredded romaine lettuce
Directions
Step #1 In microwaveable container, mix brown rice & tomato soup.
Step #2 Cook in microwave on high 3-5 mins or until rice absorbs the soup.
Step #3 Let cool.
Step #4 Place tortilla on flat board.
Step #5 Spread 1/8 of refried beans on tortilla.
Step #6 Top with 1/4 c rice, 1/4 c lettuce, & 1 tbsp onion.
Step #7 Roll up tortilla, tucking in both sides.
Step #8 Make 7 more.
