Low Cal Bean & Rice Burritos Recipe

Ingredients
  • 1 1/3 c lowfat refried beans .
  • 1 c cooked brown rice .
  • 8 small soft whole wheat tortillas, warmed .
  • 1/2 c sliced yellow onions .
  • 1 c low-fat tomato soup .
  • 2 c shredded romaine lettuce

Directions
  • Step #1 In microwaveable container, mix brown rice & tomato soup.
  • Step #2 Cook in microwave on high 3-5 mins or until rice absorbs the soup.
  • Step #3 Let cool.
  • Step #4 Place tortilla on flat board.
  • Step #5 Spread 1/8 of refried beans on tortilla.
  • Step #6 Top with 1/4 c rice, 1/4 c lettuce, & 1 tbsp onion.
  • Step #7 Roll up tortilla, tucking in both sides.
  • Step #8 Make 7 more.
